Nutrition is the science of how food affects the body's growth, maintenance, and disease prevention. It encompasses the study of macronutrients (carbohydrates, proteins, and fats) that provide energy and structural materials, and micronutrients (vitamins and minerals) that enable biochemical reactions. Good nutrition is foundational to physical and mental health - Poor nutrition is implicated in many of the world's leading causes of death, including heart disease, type 2 diabetes, obesity, and certain cancers. The science of nutrition has evolved dramatically over the past century, from the discovery of vitamins to current research on the gut microbiome.

Macronutrients and Micronutrients

The three macronutrients provide energy measured in calories: carbohydrates (4 calories per gram), proteins (4 calories per gram), and fats (9 calories per gram - The most energy-dense). Carbohydrates are the body's preferred energy source; proteins are essential for building and repairing tissues, enzymes, and hormones; and fats are essential for cell membranes, hormone production, and absorption of fat-soluble vitamins (A, D, E, K). Fiber - A type of carbohydrate the body cannot fully digest - Is essential for digestive health and is associated with reduced risk of heart disease and type 2 diabetes. Water, while not a macronutrient in the traditional sense, is essential for virtually all body functions.

Essential vitamins include: Vitamin C (ascorbic acid - Found in citrus fruits, essential for immune function and collagen synthesis; deficiency causes scurvy), Vitamin D (produced by sunlight exposure and found in fatty fish; essential for calcium absorption and bone health), Vitamin B12 (found only in animal products; essential for nerve function and red blood cell formation), and folate/folic acid (essential for DNA synthesis and especially important during pregnancy to prevent neural tube defects). Minerals including calcium, iron, potassium, and zinc play vital roles in body function. The Mediterranean diet is consistently ranked as one of the healthiest dietary patterns.
